Senior Innovation Scientist – Functional Dairy Starter Cultures & Fermentation m/f/d

As Senior Innovation Scientist m/f/d, you will take a leading role in developing and optimizing novel starter cultures for fermentation and dairy applications. You’ll work at the intersection of science and product innovation, designing and optimizing novel starter cultures for fermented dairy applications — driving improvements in quality, functionality, and sustainability.
Your responsibilities:
- Design, develop, and optimize functional starter cultures for food and fermentation applications
- Isolate, characterize, and screen microbial strains (bacteria, yeasts, fungi) for desired traits
- Conduct lab- and pilot-scale fermentations and translate findings into scalable processes
- Apply molecular biology and analytical methods to advance strain development
- Collaborate closely with process engineering, product development, and quality teams
What you bring:
- Master’s degree or PhD in Microbiology, Biotechnology, Biochemistry, or Food Technology
- Strong expertise in fermentation, microbial physiology, and strain optimization
- Hands-on experience with microbial cultivation and analytical techniques
- Ideally, experience with lactic acid bacteria, probiotics, or functional starter cultures
- A curious, independent mindset and strong scientific communication skills in English
