Job Description Job Description Job Title: Quality Assurance (QA) Specialist – Meat Processing Location: Commerce, Ca Department: Quality Assurance / Food Safety Reports To: QA Manager or Plant Manager Employment Type: Full-Time Position Summary: The Quality Assurance (QA) Specialist ensures that all meat products meet company standards for quality, safety, and regulatory compliance. This role supports the development, implementation, and maintenance of food safety and quality programs, including HACCP, GMPs, and USDA/FDA requirements. The QA Specialist works closely with production, sanitation, and maintenance teams to ensure consistent product quality and adherence to all regulatory and customer specifications. Key Responsibilities: Conduct routine quality and food safety checks on raw materials, in-process products, and finished goods. Monitor and verify compliance with HACCP , SSOPs , and GMPs throughout production. Assist in maintaining and updating QA documentation, records, and logs (temperature charts, metal detector checks, labeling verification, etc.). Support internal and external audits (USDA, customer, third-party, etc.). Perform microbiological and chemical sampling and testing (e.g., swabs, shelf-life, pathogen testing). Investigate and document product non-conformances, deviations, and customer complaints. Train production employees on food safety and quality procedures. Work with production teams to implement corrective and preventive actions (CAPA). Participate in continuous improvement projects focused on food safety, yield, and quality enhancement. Ensure compliance with company policies and local, state, and federal food safety regulations. Qualifications: Education: Associate or Bachelor’s degree in Food Science, Animal Science, Microbiology, or related field (or equivalent experience). Experience: 1–3 years of QA or food safety experience in meat or poultry processing . Knowledge of HACCP, GMPs, and USDA regulations required. Skills & Abilities: Strong attention to detail and organizational skills. Ability to communicate clearly with plant staff and management. Basic computer skills (Microsoft Excel, Word, and data entry systems). Ability to work in cold and fast-paced production environments. Bilingual (English/Spanish) is a plus. Working Conditions: Work is primarily performed in a cold, wet, and refrigerated environment. Must be able to stand, walk, bend, and lift up to 50 lbs for extended periods.
